If you are like me and you love Mexican food but worry because you are on a keto diet, so so you will not be able to eat all the Mexican food you want, then it is good to know that the Keto or Low-carb lifestyle and Mexican food do go hand in hand.

One of the perfect Mexican meal recipes is to have Mexican Lime Grilled Chicken, Pico de Gallo salsa, guacamole, and a delicious cauliflower Mexican rice. All these make a great keto Mexican meal.

Eating Mexican Food On The Keto Or Low Carb Lifestyle

Mexican food and the keto and low-carb lifestyle go hand-in-hand. You can eat great foods on the keto and low-carb lifestyle. Here are some great Mexican foods you can always eat on the keto and low-carb lifestyle.

These foods are also great to eat if you are going to a Mexican restaurant to eat out:

  • Pico de Gallo Or Other Salsas – Most Mexican salsas are great to eat on a keto or low-carb lifestyle. The main thing is to avoid salsa that has corn or mangos. But any salsa with tomatoes, onions, garlic, fresh cilantro, and fresh lime. We have a recipe below for Pico de Gallo, a great salsa on a keto and low-carb diet.
  • Guacamole – Guacamole you can eat on keto and low carb lifestyle. Add extra guacamole to your Mexican food. We have below an excellent recipe for Guacamole.
  • Grilled Vegetables – Grilled vegetables can always be eaten on a keto and low-carb diet. You can always add extra grilled vegetables when making Mexican food or eating out.
  • All Kinds Of Meats – You can eat all kinds of meats on a keto and low-carb diet. You can have chicken, beef, pork, or even shrimp. On some of the pork, be careful that it is not cooked with a lot of sugar. Some Mexican restaurants will cook pork in coke or other sugars. We have a great recipe for grilled lime chicken below.
  • Sour Cream -You can eat sour cream on a keto and low-carb lifestyle. Add extra sour cream to your food and enjoy.
  • Cheese – Cheese can also be eaten on a keto, and low-carb lifestyle, so feel free to add extra cheese to all your Mexican food.
  • Cauliflower Mexican Rice – You can not eat rice, beans, flour tortilla, or corn chips on a keto and low-carb diet, but you can make Mexican cauliflower rice. We love the Mexican Cauliflower rice as it is all the taste of Mexican rice but without the carbs that the Mexican rice has.

Fresh Grilled Lime Chicken – Mexican Recipe

Fresh Grilled Lime Chicken – Mexican Recipe

Serving Size:

Ingredients

  • 1.2 to 1.5 lb chicken breast (600 to 750 grams)
  • 4 to 6 Tablespoons of Fresh lime
  • 2 finely chopped fresh garlic cloves
  • 2 Tablespoons Brown Monk Fruit Sugar
  • 1/4 Tsp pepper or to taste
  • 1 Tablespoon olive oil
  • 3 Tablespoons cilantro finely chopped
  • 1 to 2 tablespoons fish sauce
  • pinch of cumin

Directions

  1. Pound chicken breasts only take a minute, but they will grill easier and quicker.
  2. Put chicken in a bowl
  3. Mix all ingredients, including some olive oil.
  4. Allow Chicken breast to marinate overnight or for 1 or 2 hours. We find it easy to allow it to marinate overnight to use it the next day.
  5. Place chicken on a grill to cook. Alternatively, you can bake or grill in the oven. Cook until completely done.
Mexican Cilantro Cauliflower Lime Rice

Mexican Cilantro Cauliflower Lime Rice

Ingredients

  • 1 cup finely chopped peppers (we mixed red, green, and yellow peppers)
  • 1 tomato finely chopped up
  • 2- 3 cloves of fresh garlic finely chopped
  • 1/2 red onion finely chopped
  • 1 1/2 cup cauliflower rice can we fresh or frozen
  • 3 to 4 Tables of fresh lime juice
  • 1 tablespoon chicken broth. We use Better Than Bouillon Roasted Chicken base
  • salt to taste
  • olive oil
  • 1 cup finely chopped cilantro leaves
  • Pinch of cumin (optional)

Directions

  1. In a pan, heat some olive oil
  2. Put in the pan fresh garlic, onions, peppers, and tomatoes. (we like to use a Chinese wok for this, and we start with garlic and onions and then add in other vegetables)
  3. Mix 1 Tablespoon of Chicken brother into the ingredients.
  4. Add in Cauliflower rice and allow all saute until fully cooked.
  5. Add in lime and continue to mix.
  6. Season with salt.
  7. Add in the cilantro. Leave a small amount for the topping.
  8. Serve with sour cream and cheddar cheese.
Pico de Gallo Salsa Recipe – A Keto Diet Staple  

Pico de Gallo Salsa Recipe

Ingredients

  • 1 1/2 Cups Fresh Tomatoes or 1 pound finely chopped.
  • 1 cup chopped red onions or about 1/2 onion
  • 1 cup peppers (we like to mix yellow, green, and red peppers)
  • 2 tablespoons fresh garlic or about 2 to 3 cloves
  • 1/2 cup fresh cilantro finely chopped
  • 4 tablespoons salt or to taste
  • 1 tablespoon Jalapeno peppers or red chili peppers (optional and to taste)
  • 6 tablespoons of lime
  • Pinch of cumin

Directions

  1. Cut up all vegetables into small pieces
  2. Mix all the vegetables in a bowl (including peppers and cilantro)
  3. Add lime juice
  4. Add salt to taste
  5. Add a pinch of cumin

  • 4 Fresh and Ripe Avocados
  • 1/2 red onion finely chopped
  • 1 or 2 Jalapeno peppers or red chili peppers (optional and to taste)
  • 4 Teaspoons Fresh Lime Juice
  • 1 tomato finely chopped
  • Red, Green, or Yellow Pepper finely chopped
  • 2 cloves fresh garlic finely chopped
  • 1/2 cup cilantro finely chopped
  • Salt to taste

Directions

  1. Finely smash Avacodo
  2. Smash up the red onions and garlic,
  3. Smash up peppers, Jalapeno, or red chili peppers
  4. Smash up tomatoes,
  5. Smash up cilantro
  6. Make sure all ingredients are smashed up together
  7. Mix in lime juice
  8. Add salt to taste
