We love Mexican salsa and Mexican rice, but unfortunately, when you are on a low-carb keto diet, rice is one of the foods you should not eat as it has so many carbohydrates. We have converted the Mexican cilantro rice into delicious Mexican cilantro cauliflower lime rice.
Mexican cilantro cauliflower lime rice is a great dish to add to your Mexican meal or to eat alone. This is very similar to the Mexican rice you would eat with a Mexican meal, except instead of rice, we are using cauliflower rice so it can be keto and low-carb lifestyle compliant.

About the Ingredients For the Mexican Cilantro Cauliflower Lime Rice
Like all of our food, we believe in using fresh ingredients. The Mexican cilantro cauliflower lime rice is no exception as it uses many fresh ingredients.
Here are a few things to remember about the ingredients:
- Cauliflower Rice – The cauliflower rice can be fresh or frozen. Frozen rice is convenient and can easily be bought in the grocery store. We usually make rice fresh by grading the cauliflower. It is a straightforward process and an easy way to use fresh cauliflower for a dish like this.
- Fresh Cilantro – Use fresh cilantro for your cauliflower rice. As with all Mexican food, cilantro should always be fresh. Dried cilantro for this dish will never taste the same as fresh cilantro.
- Fresh Garlic – To make this dish correctly, you must use fresh garlic. Do not use the garlic that comes out of a tube or in a jar because it does not have the same taste as fresh garlic, and the rice will never taste the same if you use that type of garlic.
- Lime – It is best to use fresh lime for this cauliflower Mexican rice. Lime is not as sweet as lemon, so if you use a lemon, it will not taste the same as fresh lime. Also, we do not recommend using any lime that has been processed or in a bottle but only fresh lime.
- Onion – We use a red onion for our cilantro lime rice, but if you do not have a red one, you can use a yellow one. The main thing is the onion should be cut up into small pieces.
- Tomatoes – We also add tomatoes to our Mexican cilantro cauliflower lime rice. Again the tomato should be cut up into small pieces so they can easily be placed into the rice.
- Peppers – For all of our Mexican food, we like to have a combination of yellow, red, and green peppers finely chopped. We love this combination of all the peppers and how they work together with Mexican food.
- Chicken Broth – We use chicken broth for this Mexican cilantro cauliflower lime rice. We feel like the chicken broth adds some extra flavor to the dish. The chicken and the chicken broth that we like is the brand that is called Better Than Bouillon. The Better Than Bouillon chicken broth brand can be bought in all major grocery stores.
- Cumin – We add a pinch of cumin to our cilantro cauliflower lime rice. If you do not like cumin, you can omit this; we feel like cumin gives the rice a more authentic taste,
- Salt – We recommend that you use sea salt for your rice. Add salt as per your taste.
- Olive Oil – We use olive oil to fry up our fried rice. But of course, you can use other oils such as avocado or coconut.
- Serve With Sour Cream And Cheddar Cheese – This rice should be served with sour cream and cheddar cheese.

Cooking The Mexican Cilantro Cauliflower Lime Rice
Cooking Mexican cilantro cauliflower lime rice is similar to cooking Chinese fried rice. We recommend cooking this type of rice in a pot like a Chinese wok.
We like to start by putting the oil in the pan and heating it, then starting with the garlic, the onions, and the rest of the vegetables, quickly stirring them around in the oil until they are almost cooked.
Next, we will add the chicken broth to the mixture and ensure it is thoroughly mixed.
This method is quick cooking, so you constantly move the food around in the pan so it will not burn.
Add the cauliflower rice and allow all the cauliflower rice and vegetables to simmer together until almost fully cooked. Add in the lime and season with salt as a final set. You can allow the vegetables to all simmer before taking them out of the pan.
Before taking the mixture out of the pan, we will then add the fresh cilantro.
We like to serve this dish with sour cream and cheddar cheese.
Mexican Cilantro Cauliflower Lime Rice
Ingredients
- 1 cup finely chopped peppers (we mixed red, green, and yellow peppers)
- 1 tomato finely chopped up
- 2- 3 cloves of fresh garlic finely chopped
- 1/2 red onion finely chopped
- 1 1/2 cup cauliflower rice can we fresh or frozen
- 3 to 4 Tables of fresh lime juice
- 1 tablespoon chicken broth. We use Better Than Bouillon Roasted Chicken base
- salt to taste
- olive oil
- 1 cup finely chopped cilantro leaves
- Pinch of cumin (optional)
Directions
- In a pan, heat some olive oil
- Put in the pan fresh garlic, onions, peppers, and tomatoes. (we like to use a Chinese wok for this, and we start with garlic and onions and then add in other vegetables)
- Mix 1 Tablespoon of Chicken brother into the ingredients.
- Add in Cauliflower rice and allow all saute until fully cooked.
- Add in lime and continue to mix.
- Season with salt.
- Add in the cilantro. Leave a small amount for the topping.
- Serve with sour cream and cheddar cheese.
