Caesar salad is one of my favorite salad dressings. I love the taste of the dressing and find it to be a very versatile dressing to use for many kinds of salads.

This recipe is our basic caesar salad dressing recipe. It is filled with great nutrients, including parmesan cheese, anchovies, and mayonnaise. All great ingredients are keto-friendly and just a tremendous primary salad dressing to always have on hand. This salad dressing will pair well with many kinds of salads.

We like to add chicken or bacon bits to our caesar salad for some added protein.

Caesar Salad Dressing And Anchovies

Anchovies

Anchovies are a great ingredient choice for caesar salad dressings because they provide a salty flavor that pairs well with other ingredients, such as parmesan cheese. That is why a good caesar salad dressing will always have some anchovies.

You do not need a lot of anchovies to flavor your caesar salad dressing; just a few fillets will do.

You can always use anchovy paste if you do not want to use the anchovies. But we prefer the fillets because they taste better than some anchovy paste.

Anchovies are also high in protein, B vitamins, and omega-3 fatty acids, all of which are essential for a healthy diet. Anchovies also contain calcium, magnesium, iron, phosphorus, and selenium – all these essential minerals that help maintain good health.

Parmesan Cheese And Caesar Salad

Parmesan Cheese

A delicious caesar salad should always have good parmesan cheese.

If you use parmesan cheese with your caesar salad dressing, we recommend getting good Italian parmesan cheese.

The good parmesan cheese you can buy at the grocery store will come in a block. You will need to grate the cheese to be able to use the cheese. You need to take this extra step, but it is a much better cheese for caesar salad than dried parmesan cheese.

Also some anchovies are saltier than others, so that is why the salt is to taste to account for anchovies that have more salt in their oil.

Why We Use Mayonnaise In Our Caesar Salad Dressing?

Real caesar salad dressing uses egg yolks. Raw eggs and egg yolks can be tricky because you can get sick if they are not pasteurized correctly. We prefer to use mayonnaise instead of eggs with our caesar salad dressing.

Mayonnaise is excellent to use on the keto and low-carb diet. Not only will it last longer in the refrigerator as a salad dressing, but it also works to give caesar salad dressing the creamy taste and desire we like.

Dijon Mustard And Your Caesar Salad

Dijon mustard is a classic type of ingredient that you should always have in your refrigerator. Dijon mustard pairs well with many dishes, including the caesar salad dressing.

We like to use a French type of Dijon mustard as it works best. We like to use the Grey Poupon Dijon Mustard or Maille Dijon Mustard. We find that both work very well in this Caesar Salad dressing.

Add Parmesan Chips For An Added Crunch In Your Caesar Salad

Caesar salad usually calls for you to add croutons to your caesar salad. As croutons and bread are not part of the keto or low-carb diet, we recommend using parmesan chips instead.

You can buy parmesan chips at most grocery stores or make your own by baking parmesan cheese in the oven.

But whatever you decide to do, the parmesan chips can add great flavor and add that extra crunch to the caesar salad that you will find in a caesar salad with croutons.

Ingredients

  • 6 anchovy fillets packed in oil, drained, and cut up
  • 1 small garlic clove, cut up
  • Sea salt to taste
  • 1/2 Cup Mayonnaise
  • 2 Tablespoons Fresh Lime or Lemon Juice
  • 1 Tablespoon Dijon Mustard
  • 1/2 Cup Olive Oil
  • 1/4 Cup Parmesan Cheese
  • Black Pepper

Directions

  1. Chop and mix together anchovy fillets, garlic, and a pinch of salt to taste. Smash them all in a kind of paste. You can do this by using the back of a knife blade.
  2. Add the anchovy paste to a bowl, and then add the mayonnaise.
  3. Add the fresh lime or lemon juice to the mixture. Start by adding drop by drop so it will mix completely.
  4. Whisk in the Olive oil
  5. Mix all well
  6. As a final step, add the parmesan cheese.
  7. Add black pepper and salt to taste.
