Prepare to indulge your senses with the incredible Yellow Curry Chicken Salad. This salad is a delightful symphony of flavors that will captivate your taste buds. But it doesn’t stop there – it also offers a satisfying crunch with the addition of nuts, apples, and celery. Every bite is a harmonious blend of textures and tastes that will leave you craving more.


  • 2 to 2.5 Pounds 2 to 2.5 pounds of Rotisserie Chicken cut up into small pieces, meat only

  • 1/4 Cup 1/4 cup Raisins

  • 1/4 Cup 1/4 cup Cashew nuts, minced and cut up

  • 1/2 Cup 1/2 cup Sliced apple. (See notes)

  • 1/2 Cup 1/2 cup Sliced Celery of about 1 to 2 ribs

  • 1/4 Cup 1/4 cup Red Onion cut into small pieces

  • 1/2 Cup 1/2 cup Mayonnaise

  • 1/2 Tablespoon 1/2 Tablespoon Yellow curry powder

  • 1/2 Tablespoon 1/2 Tablespoon Honey

  • Salt and Pepper to taste


  • If you’re using hot chicken, allow it to cool slightly before proceeding. Remove and discard the skin, then shred or cut the meat into bite-size pieces. Transfer the chicken to a large mixing bowl. Note: If you prefer not to use rotisserie chicken, refer to the notes section for alternative suggestions. You can also save the bones for making stock if desired.
  • Add the raisins, cashews, apples, celery, and Onion in the same bowl. Toss all the ingredients together to combine thoroughly.
  • n a separate medium bowl, combine the mayonnaise, curry powder, and honey. Fold this mixture into the chicken and other ingredients in the large bowl, ensuring everything is evenly coated. Give it a good toss to thoroughly combine all the flavors—season with salt and pepper to your taste preferences.


  • Chef note: Like many things I cook, I will add extra. If you have extra apple or celery, add it in. Not only are the vegetable and fruit good for you, but they will also add to this salad. We also like to add in extra raisins and nuts.
  • For those not on a keto or low-carb diet, this is great to serve with a croissant or all alone; it is just a great salad and a way to use roster chicken,
  • To make this keto cut out the raisin and apples. You can add extra celery.
