Ingredients

  • 12 ounces of fresh mango cut up and diced (about two smaller mangoes or one huge one). Use 8 ounces for dressing and the rest for salad.

  • 1 Large cucumber or 2 smaller ones cut up

  • 1 Red pepper cut into small pieces

  • 3 pieces of scallions were cut up with white and green parts. If you cannot find them, use green onions.

  • 1.5 Pounds chicken breast, boneless and skinless,

  • 1/2 Cup Peanuts

  • 1 Teaspoon Honey

  • 1/2 Cup Red or White wine vinegar

  • 1 Tablespoon Olive Oil.

Directions

  • Salad Preparation – Mix the cucumber, bell pepper, and mango cheeks in a spacious bowl. These cheeks are the outer, firmer sections of the fruit, perfect for enhancing the salad’s texture. Keep aside a tablespoon of sliced scallions for garnishing, and add the remaining amount to the bowl. Feel free to adjust the quantity based on your preference for a subtler mango flavor. Thoroughly mix all the ingredients and set the bowl aside.
  • Pound the chicken breasts. It would be best if you pounded the chicken breasts. A meat tenderizer only takes a few minutes but will help the chicken cook and add taste to the chicken breasts.
  • Chicken Cooking – Season the chicken cutlets with fresh orange juice, salt, pepper, and coconut oil. Heat a nonstick sauté pan over medium-high heat and add enough oil to cover the pan’s bottom. Alternatively, you can grill the chicken on a barbecue until it reaches the desired doneness. The cooking time typically ranges from 3 to 4 minutes per side, depending on the thickness of the cutlets.
