Chicken Mango Salad & Mango Dressing

To enhance its taste further, we’ve prepared a tangy dressing infused with freshly squeezed orange juice and marinated chicken. Prepare to indulge in the exquisite details of this mouthwatering culinary delight – the Mango Chicken Salad!

A Balanced And Flavorful Salad

Our Mango Chicken Salad is designed to please your taste buds while providing a satisfying meal. Though it may not align with the keto diet, it can still be considered low-carb, making it a healthy choice for those who want to watch their carbohydrate intake.

Despite its lack of strict adherence to keto principles, this salad has a range of ingredients that work together harmoniously. It also fits into giving up on Ultra Processed Foods and instead eating whole foods.

The protein-packed chicken and nuts in this salad ensure that you get a substantial amount of protein, which is essential for satiety and muscle repair. The tender and juicy chicken complements the crunchy texture of the nuts, creating a delightful contrast that keeps you coming back for more.

The Sweetness Of Mango

One of the star ingredients in this salad is the mango. Its natural sweetness adds flavor and tropical touch to the dish. Mangoes are available in various varieties, so choose whichever type you can find fresh in your local market.

Whether it’s the juicy Alphonso mango or the slightly tangy Tommy Atkins, the vibrant taste of mango elevates this salad to new heights.

We incorporate it into the dressing to further enhance the mango flavor. This extra touch of mango in the dressing gives the salad an added layer of taste, ensuring that every bite is a delightful experience.

The dressing perfectly balances tangy and sweet, complementing the other ingredients without overpowering them.

The Power Of Vegetables

A great salad is not complete without abundant fresh vegetables, and our Mango Chicken Salad is no exception. This vibrant medley of vegetables provides essential nutrients, fiber, and a refreshing crunch that perfectly complements the other elements.

We recommend using a variety of vegetables to add color, texture, and flavor to your salad. Some excellent choices include crisp lettuce, peppery arugula, juicy cherry tomatoes, and crisp cucumber slices.

Feel free to get creative and add your favorite vegetables to customize the salad. The more colorful and diverse the vegetables, the more visually appealing and nutritious the salad becomes.

The Tangy Orange Dressing

The dressing is crucial in tying all the flavors in this Mango Chicken Salad. Our preferred choice for the dressing is fresh orange juice, as it adds a delightful tanginess that complements the sweetness of the mango and balances the richness of the chicken and nuts.

The citrusy notes of the orange juice awaken the taste buds and provide a refreshing burst of flavor.

We suggest using the leftover orange juice from the dressing to marinate the chicken to maximize the orange flavor. This simple step infuses the chicken with a subtle citrus taste, ensuring every bite is infused with a delightful zing.

The marinated chicken and other ingredients create a harmonious, satisfying, refreshing flavor profile.

Our Asian Mango Chicken Salad Tips

Preparing this salad is a breeze, and you can even make it ahead of time to enjoy throughout the week. By cooking the chicken in advance and storing it separately, you can quickly assemble single servings whenever you’re ready to indulge in a nutritious and flavorful meal.

The versatility of mangoes makes them a perfect fit for this salad. But I have also used the Mango dressing in a regular green salad with lettuce, tomatoes, onions, and cucumbers. Feel free to throw in a bit of feta cheese.

Our Mango Chicken Salad offers a delectable blend of flavors, textures, and nutrients. While it may not be suitable for strict keto diets, it is a satisfying and low-carb option that incorporates protein, sweetness, and a medley of vegetables. But be sure to try other vegetables and combinations.

The mango infusion in both the dressing and the marinated chicken adds a delightful layer of taste that enhances the overall experience. But what is excellent is that mango dressing can be used as a fruity for many kinds of salads.

One of the reasons we love this salad so much is that it is fresh without ultra-processed foods. We are great believers in eating fresh and unprocessed foods.

  • 12 ounces of fresh mango cut up and diced (about two smaller mangoes or one huge one). Use 8 ounces for dressing and the rest for salad.

  • 1 Large cucumber or 2 smaller ones cut up

  • 1 Red pepper cut into small pieces

  • 3 pieces of scallions were cut up with white and green parts. If you cannot find them, use green onions.

  • 1.5 Pounds chicken breast, boneless and skinless,

  • 1/2 Cup Peanuts

  • 1 Teaspoon Honey

  • 1/2 Cup Red or White wine vinegar

  • 1 Tablespoon Olive Oil.

  • Salad Preparation – Mix the cucumber, bell pepper, and mango cheeks in a spacious bowl. These cheeks are the outer, firmer sections of the fruit, perfect for enhancing the salad’s texture. Keep aside a tablespoon of sliced scallions for garnishing, and add the remaining amount to the bowl. Feel free to adjust the quantity based on your preference for a subtler mango flavor. Thoroughly mix all the ingredients and set the bowl aside.
  • Pound the chicken breasts. It would be best if you pounded the chicken breasts. A meat tenderizer only takes a few minutes but will help the chicken cook and add taste to the chicken breasts.
  • Chicken Cooking – Season the chicken cutlets with fresh orange juice, salt, pepper, and coconut oil. Heat a nonstick sauté pan over medium-high heat and add enough oil to cover the pan’s bottom. Cook the chicken cutlets in batches, if needed, until they achieve a delightful brown color and are thoroughly cooked. Alternatively, you can grill the chicken on a barbecue until it reaches the desired doneness. The cooking time typically ranges from 3 to 4 minutes per side, depending on the thickness of the cutlets.
  • Chicken Slicing – After cooking, take the chicken out of the pan or grill and slice it into strips approximately 2 inches long, matching the vegetables’ size. Add these sliced chicken pieces to the vegetable bowl, gently combining them.
  • Mango dressing Preparation – Combine the mango flesh (approximately 8 ounces), honey, orange juice, vinegar, oil, salt, and pepper to your preferred taste in a blender. Blend the ingredients until the dressing becomes smooth and well-combined. If the dressing seems too thick, you can gradually add more orange juice, one tablespoon at a time, until it reaches the desired pourable consistency.
  • Assembly and Serving – Drizzle the mango dressing over the chicken and vegetable mixture and coat everything evenly. Gently toss the salad to combine all the ingredients. Sprinkle the reserved scallions on top for garnish, and, if you prefer, add optional peanuts to provide an extra crunch. For additional flavor, you can sprinkle freshly ground black pepper if desired. Serve the salad promptly to enjoy its freshness.
  • Storage Recommendation – To maintain optimal freshness, store the fruits, vegetables, dressing, and cooked chicken separately in airtight containers in the refrigerator. When ready to serve, assemble the salad again by combining the ingredients. This way, it will stay fresh for approximately three days.

  • Indulge in the vibrant flavors of this Chicken Mango Salad with Mango Dressing, where the freshness of the vegetables, the tender chicken, and the delightful sweetness of mango come together in perfect harmony.
